In the glass. Tends towards taut, tense white wine with plenty of definition and somewhat less flesh. How strongly that comes through depends mainly on the soil depth within the plot, which can vary greatly on this hard limestone.

Hard, crystalline limestone consisting almost entirely of finely broken stem segments of sea lilies, the entroques, piled up by currents on a shallow, agitated seabed. Fresh, the stone is blue-grey and glitters with calcite; at the surface it weathers to beige and rusty brown. It comes with thin layers of iron-bearing oolites and marly, siliceous limestone beds.

For the vine. Hard and compact, so the roots have to follow cracks and fissures; the soil above is usually shallow, stony and quick to dry. The shallow, stony soil warms up quickly, which can bring ripening forward, although aspect and slope weigh more heavily in that than the rock type. The active lime content can be high, and because the iron in the oolites is bound as oxide and barely available to the plant, it does not remove the chlorosis pressure; the choice of rootstock does.

In the Mâconnais the Aalenian usually lies hidden beneath slope scree at the foot of the cliffs; the rocks of Solutré and Vergisson themselves consist mainly of Bajocian Calcaire à entroques and Calcaire à polypiers.
