In the glass. Often linked with firm, long-lived red wine with a taut structure. Several famous parcels lie on it, although the explanation for that lies just as much in slope, fault lines and soil depth.

Limestone consisting almost entirely of broken shell material, formed in moving shallow water on a warm carbonate bank in the Middle Bajocian, roughly 169.5 to 168.5 million years ago. It is hard, porous stone that breaks up into angular blocks, with a coarse-grained, faintly glittering appearance. The famous calcaire à entroques strictly belongs to the Lower Bajocian and on the map falls partly outside this code.

For the vine. Very permeable and stony, with many cracks along which roots can go deep, which helps more in dry years than the small water storage would suggest. Stony soils on this layer warm up quickly, although that is mainly due to the stone cover and the orientation of the slope and not to the limestone itself. The layer is rich in lime, so the rootstock counts, and it works best where the grit is mixed with some marl and fine earth.

Beneath the grands crus of Gevrey-Chambertin lies a sequence running from calcaire à entroques at the bottom via marnes à Ostrea acuminata and clayey limestone to the pierre de Prémeaux at the top; the entroques limestone forms only the lowest band of it.
