In the glass. In so far as there is a tendency, it is towards fresh, linear wines with firm acidity, arising from the coolness and the even water supply. Often the thickness of the clay with flint on top determines more than the chalk itself. (weak indication)

Upper Cretaceous, roughly 90 to 84 million years old. This is true chalk: a white, soft and porous rock consisting almost entirely of the calcareous skeletons of microscopic plankton, settled in a calm, warm sea, with local bands of flint. Under the spade it breaks up into white grit, and on top usually lies a thin cover of clay with flint which in practice forms the topsoil.

For the vine. Chalk retains a great deal of water in very fine pores and releases it slowly, so that drought stress sets in later than the shallow soil depth would suggest, while excess rain still drains away. It is a cool subsoil that warms up late; that delays ripening, which in practice often goes together with higher acidity, and the roots penetrate deep along fissures. The active lime content of the soil is very high, so lime-tolerant rootstocks are no luxury here.

Coniacian and Santonian chalk comes to the surface in Bourgogne only in the far north-west of the Yonne, on the plateaux of the Pays d'Othe, largely outside the planted area.
