In the glass. Tends towards fragrant, somewhat leaner wine with bright acidity and fine tannin. The thin soil makes the result strongly vintage-dependent, more than the rock type itself explains.
A hard, cross-bedded shell-debris limestone that gleams like mother-of-pearl, hence the name dalle nacrée. It formed in agitated, shallow water with sandbanks of shell and bryozoan debris, locally with oolites and small coral lumps, at the end of the Bathonian and the start of the Callovian. The sequence is some twenty metres thick and breaks into slabs with pearly, ochre to rusty fracture surfaces.
For the vine. Hard, well-fissured limestone with a thin, stony soil on top, excellently drained, quick to warm and with little water reserve. The slabs are well fissured, so roots can get deeper than the thin profile suggests; whether that yields enough water in a dry summer depends mainly on the thickness of the weathered cover above. The active lime content is high, so chlorosis calls for attention.
Forms the hard bed high on the slope and on the plateau edge of the Côte; in the south of the Côte de Beaune, around Chassagne-Montrachet and Santenay, the Callovian reaches into the vineyard.
