In the glass. Tends towards taut white wines with firm acidity and little fat, and in reds towards slender wines that can turn out lean in cool years. Altitude and aspect presumably do more here than the rock. (weak indication)

Light, hard limestone from a warm, shallow sea with small reefs and shell banks, roughly 157 to 155 million years ago. These beds form above all the plateaux and the upper rim above the Côte, and parts of the ridges of the Côte Chalonnaise. In the ground it is slabs and fragments of stone in a thin brown soil, often no more than a few decimetres deep.

For the vine. Very fast drainage and little fine earth, so a small water supply and sensitivity to drought, unless there is marl beneath or scree is supplied from above. The stone stores warmth by day, but the high position makes these plots cooler and later than the classic slopes. The active lime content is usually high here, which calls for a deliberate choice of rootstock to avoid chlorosis.

The formation is named after Saint-Romain; it also comes to the surface near Givry and Germolles, among other places.
