In the glass. Sauvignon from this limestone is described in Pouilly-Fumé as early, open, floral and approachable, as against the tighter, later-ripening wines of the clay-with-flints. A well-founded contrast, but not a law.

Hard, white Upper Oxfordian limestone, the equivalent of the limestone of Tonnerre and Vermenton, on the Loire map sheet near Pouilly. Forms the limestone ridge along the river on which Pouilly and Saint-Andelain stand, beneath the clay-with-flints and the terraces.

For the vine. Shallow, stony, lime-rich and dry; quick to warm, little water. The classic 'caillottes' ground of Pouilly and Sancerre, with small limestone fragments in a thin silt cover.
