In the glass. Associated in the trade with taut, sharply defined wine. Here too the mechanism is above all the thin, stony, warm and well-drained profile, not the calcite of the sea lilies themselves.
Limestone built up from the broken stem segments of sea lilies, animals that stood in dense fields on a shallow, well-flushed seabed. The debris piled up into coarse, granular beds that glitter in the light from the calcite crystals and feel almost like a sandstone. Bajocian, about 171 to 168 million years old.
For the vine. Coarse-grained and relatively porous, breaking down into angular stones and a granular, free-draining soil that warms quickly. The water reserve in the rock itself is small, so what carries the vine through the summer is usually the clay or marl band beneath, or the colluvium above. The active lime content is high, with a real chlorosis risk.
Forms the lowest hard bed of the Côte and outcrops in the combes and at the bottom of the slope; also widespread in the Mâconnais.
