In the glass. In the Vitryat mainly Chardonnay: fresh, slender base wines with high acidity and less richness than the Côte des Blancs. A small, peripheral area; the substrate helps explain the restrained style.

Grey, clayey chalk with nodular limestone beds, deposited in a deeper, calmer sea in the Lower and Middle Turonian. Older and less pure than the white Campanian chalk of the Côte des Blancs; outcrops in the Perthois and the Vitryat, in the south-east of the Marne.

For the vine. Marly chalk: holds more water than pure chalk, warms more slowly and contains a lot of active lime. Drains reasonably well through the fissures in the limestone beds. Cold, late ground on flat to gently rolling land.

Vitryat and Perthois: Vitry-en-Perthois, Bassu, Bassuet, Vavray-le-Grand, Vavray-le-Petit, Val-de-Vière, Glannes, Saint-Lumier-en-Champagne, Vanault-le-Châtel.
