In the glass. There are too few identifiable parcels on this unit to attach a style to it. Where vineyards lie close to the plateau edge, altitude, thin soil and the cooler position explain more than the stone.

The Oolithe blanche is a very pure, pale limestone consisting almost entirely of ooid grains, formed in shallow, moving, warm platform water in the Middle to Upper Bathonian, roughly 167 to 165 million years ago. Its hardness varies from place to place, from fairly soft and granular to compact and hardly porous. In the Yonne, the Châtillonnais and parts of the Mâconnais it forms the plateaux and small cliffs; in the Côte d'Or that role is mostly played by the Comblanchien and the Dalle nacrée.

For the vine. Almost pure lime with little clay, so very permeable and with a small water reserve of its own. Parcels on it usually lie on or just below the plateau edge, where the soil is thin and the vine has to rely on cracks and weathered material brought in from elsewhere. The active lime content is high, and the higher position slows ripening.

Forms the plateau edges and small cliffs in the Yonne, the Châtillonnais and parts of the Mâconnais; rarely planted on its own.
