In the glass. Sauvignon from this ground is described in Pouilly-Fumé as tight, smoky and late-ripening. That 'flint aroma' does not come from the stone itself, but the combination of clay, warmth and late ripening is characteristic.

Slope material washed down from the clay-with-flints (argile à silex), the weathering residue of the Upper Cretaceous. A brown to reddish-brown clay full of sharp flint fragments, moved and mixed over short distances in the Quaternary. Around Pouilly-sur-Loire this is the classic 'terre à silex' of the higher slopes and plateaus.

For the vine. Heavy clay that holds water, but still drains reasonably well thanks to the high stone content and takes up and retains warmth quickly. Decalcified and therefore without a chlorosis problem; prone, however, to compaction and erosion.
